A sweet but sour base (because of our cranberries in the bars) with a creamy filling! What more could we want?
For the filling:
- 2 skyr strawberry yoghurts
- 1 block of tofu
- ½ cup erythritol
- 6 grams agar agar powder
For the topping:
- strawberry jam (or you can make your own)
1 - First prepare the base by putting all the ingredients in a food processor until you get a sticky paste;
2 - Place the base in a mould and put it in the fridge;
3 - Prepare the filling. Drain the tofu well and put it in a food processor with the rest of the ingredients. Put on maximum speed for 5 minutes;
4 - Take 100 ml of the mixture and heat in a pan with the agar agar and bring to the boil without stopping stirring;
5 - Allow to cool slightly and then add to the rest of the mixture and mix for 1 minute;
6 - Pour the filling into the mould and chill until it becomes like jelly;
7 - Finally, put the jam on top and the strawberries!
