MARS BARS WITH CASHEW PASTE
We're all gluttons, but if we can be gluttons without guilt, all the better! We've recreated a "MARS" bar, but all shouting I'M NAT 🤤
Recipe:
Stuffing:
- 400g dates
- 200gr of Oat Flakes
- 150g toasted cornflakes
- 180g agave syrup
- 200ml of vegetable drink (soya or hazelnut is best for thickening...)

Caramel:
- 180g agave syrup
- 360gr Cashew Paste
- 50g chocolate to melt
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cover:
- 300g dark chocolate to melt
- coarse salt
⠀⠀⠀⠀⠀⠀⠀⠀⠀
1- Soak the dates in hot water for 15 minutes. After this time, remove the stones (if any) and remove the skin. Place in a food processor until you have a date paste. Set aside.
2- Make the caramel in a frying pan. Add all the ingredients and stir well with a spatula/salad until well combined.
3- Take a rectangular container (about 40 cm long and 25 cm wide), put baking paper in it and pour the caramel in. Leave to cool a little and then put in the fridge for 30 minutes.
4- Introduce the filling ingredients one by one, i.e. add the oat flakes and process until they become flour, then the corn and so on. Leave the liquids for last. Process everything until you get a consistency identical to the Mars bar "biscuit".
5- Once the caramel is cold, add the second layer (the filling). It's best to leave it in the fridge overnight.
6- When the layers are very cold, add the icing. You can melt the chocolate with a spoonful of coconut oil, in the microwave or in a bain marie. Stir constantly so that it doesn't burn.
7- Remove the filling with the help of greaseproof paper and cut into bars.
8- Dip the bars in the chocolate and sprinkle some salt on top.
10- Put them back in the fridge. This is also the best way to preserve the bars.
